Herb Roasted Nuts
It was a great week over here! I had the pleasure of getting to cook with one of my favorites from one of my favorite cookbooks! If you haven’t had a chance to order one, I highly recommend you do! It is a great Christmas gift and the recipes I promise will deliver mouthwatering meals, and she explains the health benefits of the meal and gives you all the nutrition information! This recipe is one of my go-tos! They make for a great hostess gift, teacher, stocking stuff and definitely one you will want to gift yourself! I only add a TINY splash of the maple syrup for my #ketolife but here is the rest of the recipe for you, and a little note from Ali!
Herb Roasted Nuts
Makes: 15 Servings, about ¼ cup each
2 cups almonds
2 cups pecans
1 cup cashews
1 cup chopped brazil nuts
1/3 cup maple syrup
2 Tbsp coconut oil
1 Tbsp each: chopped fresh rosemary, basil, thyme
Generous pinch of sea salt
Preheat oven to 300 degrees F. Mix nuts and set aside. In a separate bowl mix maple syrup, cayenne, coconut oil and herbs. Stir in nuts and ensure all are equally coated. Spread on unbleached parchment paper over baking sheet and sprinkle with sea salt. Place baking pan at center of preheated oven, bake for 15 minutes. Then move baking sheet to top rack of oven and bake an additional additional 10 min at top rack until liquid evaporates. Cool and store air-tight in mason jars. Consider filling jars and giving as a gift with ribbon.

Food as Medicine Tip: Nuts are a great source of healthy fats paired with protein and a moderate dose of carbs. They are correlated with increased life expectancy and this may be due to their content of monounsaturated fats, which improve vessel health, and arginine which aids in dilating blood vessels, decreasing blood pressure. They also provide a rich source of fat soluble antioxidants which aid in fighting against cancer and cognitive decline.
