I am thrilled to introduce Sandra Tiffany’s newest contributor, Ali Miller, RD, LD, CDE.
For me, working with Ali has been life-changing and I know that her expertise will have the same effect on you. I met Ali a couple months after I had my second child, Jackson. I was desperate to lose the 45 pounds I’d gained during pregnancy and I loved Ali’s mantra – “Food-as-Medicine.” Although at the time, having a new baby and a toddler around, I wasn’t quite ready to fully commit; but, with Ali’s patience and ongoing teachings, here we are two and a half years later and I’ve lost the baby weight and feel better than ever! I am grateful for having Ali a part of my life and I’m so happy to now share her with y’all! Ali’s website is like a bible of nutritional information; from online courses, to podcasts, to tips and some of the greatest recipes I’ve tasted, you must check her out!

Ali is a Registered Dietitian, Licensed Dietitian, Certified Diabetes Educator, and a Certified Weight Management Specialist. Her “Food-As-Medicine” philosophy, which is supported by up to date scientific research, is a functional approach to healing the body and preventing disease through the food that we eat. Ali has a passion to create public awareness regarding the significant role that diet plays in our overall health. Through corporate outreach and as a public figure, Ali addresses nutrition misconceptions and myths, clarifying the extensive amount of confusing and conflicting information that often saturates the media.

Ali is the author of “Naturally Nourished: Food-As-Medicine for Optimal Health” cookbook, as well as the “Reset, Restore, Renew: Real Food Detox” program, and the “Optimal Eating” virtual course, and is widely recognized as a leader and advocate in her field. Ali has been featured on both ABC and NBC, and appears weekly on Fox 26 in Houston.
In 2015, she received the award of “Top 50 Most Influential Women in Houston” by Houston Woman Magazine.

Coffee, My Favorite Morning Ritual

Today I want to share this fabulous coffee recipe that I start each day with. When I was given this recommendation by my nutritionist, Ali Miller, I was a little hesitant on trying it at first! (for about 3 months actually!) I couldn’t get over the thought of putting butter or ghee in my coffee. Then, when I started keto I decided to give it a try, and now I can’t go a day without it!

Blending is absolutely the key! It completely transforms the coffee and makes it more creamy like a latte. The effects of the MCT oil (Medium Chain Triglycerides – which are extracted from coconut oil) and the fat from the butter is a great way to start your day off it will keep you energized and full for hours!

Here’s what you need:

  • 2 teaspoons of MCT oil
  • 1 teaspoon of ghee or grass fed butter (the fat from grass fed cows are much different from not)
  • 1 cup of coffee – I use my Nespresso machine – Mine is about 10 ounces

Here’s what you do:

  • Put the MCT oil & Ghee/Butter in the cup
  • Brew your coffee or pour your coffee over the fats
  • Then pour the coffee/fats into a blender cup I use either the Magic Bullet or my Mini Vitamex
  • Blend for about 20-30 seconds
  • Then serve

ST Little’s Shake

ST Little’s Shake

For as long as I can remember, I have always been a smoothie -for-breakfast kind of girl! I have created many recipes, some of which I still use today even being keto! From the time Elynn & Jacks started on solids, I began making them what we call “shakes”.  I just wanted them to start their day with a balanced meal as both of them are pretty picky eaters, but found I can pretty much add anything to their shake and they will drink it!

I am often asked for the recipe from friends, so I wanted to share this recipe with you too! Have fun with it, and consider getting your littles to help out. It is such a fun experience and I think they enjoy the shake even more when they have taken part in making it!

Here’s what you need:  For us it makes about 2-3 days’ worth. I serve it to the kids in the 9oz Zoli cups:

  1 cup of frozen strawberries (I use frozen so when blended it is still cold. Sometimes the Vitamix warms the shake up from all of its power.)
  1 avocado
  1 cup of blueberries
  1 cup of fresh pineapple
  1 apple – I core it, but leave the skin on for extra fiber
  3 tablespoons of fresh almond butter – I make mine at Wholefoods
  1 tablespoon of cinnamon
  3 cups of Almond milk – I make my own – recipe coming soon!
  1 cup of frozen spinach (it is not pictured, but I freeze it in measured bags and then crumble before I put in the shake and no one notices it!)
  1 tablespoon of MCT Oil (Optional)
  1 cup of granola (Optional – I just recently started adding gluten freen pumpkin spice granola and they love it)
  1 teaspoon of powdered probiotic (Optional – I have stared adding this to their shakes with the cold & flu season here it has always been my go to, to help prevent)

I always start by adding the fresh ingredients as I feel they are best at the bottom and then I add the powders, and lastly, the almond milk.

Holy Guacamole

This month, (October) I celebrated one year of being Keto! (read my original Keto post here). I did cycle out twice during the past year  temporarily. First, when I went to Italy with Alana, (had to try the gelato and pizza from the motherland) and again recently, when I went to Arizona to the fabulous spa/resort Miraval. While there, I did a cleanse through Ali Miller, my Food-As-Medicine guru! (You’ll get to know her more over the coming weeks!) Although I say I “cycled out” I did remain on a low carb, higher fat and protein diet.

Fat is a sensitive subject for me as I see so many people jump on the “keto wagon” and eat as much bad fat as possible and then become even sicker than they were before hand! Healthy fats are my go-tos and this Guacamole recipe is one I make almost every day! I love to pair it with eggs, my mustard chicken thighs (recipe coming soon!), I even put it on salads! It is so simple and so delicious! Let me know what you think. My super cute dress I’m wearing is from Wildfox.

Here’s what you need for one serving:

  • 1 Ripe Avocado
  • 1 Tablespoon of salsa – I use “Wrights Of Texas” Mild – from Wholefoods
  • Pinch of sea salt
  • Optional – Cilantro

Start by cutting your avocado and mash it in a bowl, then add your tablespoon of salsa some sea salt (to taste). Stir it together, then optionally add the cilantro to garnish and there you have it! Super easy and let me know what you think!

My Favorite Summer Salad

Everyone knows that Kourtney is the coolest Kardashian – stylish, maternal, and relatively down-to-earth, but did you know that she’s also a savvy resource on all things organic? Take note, and be sure to download her app. In the meantime, I’ll share my personal favorite Kourtney recipe.

Here’s what you need: (serves 1)

  • 1 egg quartered
  • 1/2 an avocado, sliced
  • 1/2 an heirloom tomato
  • fresh basil
  • olive oil
  • salt & peper to taste

*This salad pairs perfectly with grilled chicken.
