Adult Cream Soda

“WATCH ME WHIP….”

Admittedly a vodka girl, I’ve recently been having some fun mixing up delicious libations with the many flavored versions available on the market.  This one tastes nostalgically reminiscent of the cream soda of my youth, and has become a favorite (even amongst my most discerning cocktail guests).  The best part: it’s super simple to make.

 

Here’s what you need:

•1.5 oz Whipped Cream flavored vodka  (or substitute cake flavored vodka, which is also delicious)

•Martini Shaker

•Water (or sparkling water)

•Ice cubes

Here’s what you do:

• Fill the martini shaker with ice

• Pour the vodka into the shaker

• Add 4-8oz of water

• Shake Well, and serve on the rocks or over ice

Enjoy!

Cinnamon Toast Crunch Shake

Cinnamon Toast Crunch Shake

I absolutely adore this shake!  My version is a slight adaptation of one that I learned from Ali Miller in my Ketosis course.  My only addition to it is a dash of almond extract, which totally transforms the flavor to one that is impressively similar to Cinnamon Toast Crunch cereal….and who doesn’t love a good old sugar cereal?

Here’s what you need:

• 4-5 ice cubes
•1 cup of unsweetened vanilla almond milk
•1 tablespoon of plain almond butter
•1-2 tsps of vanilla extract
•1/8 teaspoons of almond extract
•1-2 teaspoons of ground cinnamon
•1 scoop unflavored Vital Proteins protein powder

Here’s what you do:

•   Add all ingredients in a NutriBullet cup
•   Blend and enjoy!

Mustard Chicken Thighs

Mustard Chicken Thighs

Everyone has their favorite go-to recipes when it comes to getting back on track and eating whatever your regimen calls for. One of my very favorites (I seriously eat it 2-4 days a week) is mustard chicken! As I say to all my guests when I make it… I know it sounds funny putting yellow mustard on your chicken but seriously when it cooks it has the best flavor! My current preference is pasture raised chicken thighs, I can’t get enough of them! But this recipe tastes amazing on a whole chicken, chicken breasts and ground chicken or ground turkey. It keeps the ground meats more moisturized for a couple days following your prep! You can keep it simple and just marinate your poultry in plain yellow mustard or you can follow the recipe below!

Here’s what you need: (For approx. 8 chicken thighs)

• 1/3 cup of mustard
• 2 teaspoons of smoked paprika (I love it smokey)
• 4 sprigs of thyme (optional)
• touch of garlic powder (I am not a garlic person but a couple of my friends love it with the garlic powder)

I always start by adding the mustard to a little sauce bowl then I add the smoked paprika- I mix the two together and then add it to a mixing bowl with the chicken. I use a spoon to spread the mustard all over the chicken then lastly I add in the thyme. You can let this marinate for 5 minutes or as long as you would like. If you love salt like I do, I would discourage you adding any to the marinade as it tends to dry out the poultry. I switch it up with the cooking method. Sometimes I throw it on the grill and I cook it at a medium temperature about 5-6 minutes a side. Lately I have been sautéing mine; with the La Creuset square grill pan it fits 8 perfectly I just spray the pan with some avocado oil and cook for about 5-7 minutes each side or until thoroughly cooked!

Cranberry Spritzer

Cranberry Spritzer

As I am sure you’re starting to see, I love creating cocktails, and when Ali and I were in the kitchen cooking last week she taught me this AMAZING cocktail that I was so excited to share with my guests, and now with y’all! I have been using 1.5oz of whipped cream vodka and a little note: the rosemary completes this drink so try not to forget it!

Note from Ali:
Cocktails can be a big contributor to holiday weight gain, especially when laden with sugary fruit juices and store-bought mixers. Making your own cocktails using a few simple whole food ingredients lets you keep calories and carbs in check. Sparkling water adds bubbles and volume while not contributing more sugar and a little splash of cranberry juice goes a long way to add festive color, flavor, and antioxidants. Kombucha makes a great mixer and adds beneficial probiotics. We have two holiday cocktail recipes that will make you the hostess with the mostest!

Cranberry Spritzer
Makes 1 serving

INGREDIENTS:
4 oz sparkling water
1 splash organic cranberry juice concentrate
1 sprig rosemary
1 tablespoon pomegranate seeds
Optional: 1.5 oz gin or vodka

DIRECTIONS:
Pour the sparkling water into a glass and add a splash of cranberry juice concentrate. Add the alcohol (if using). Garnish with the rosemary sprig and pomegranate seeds.

Nutrition facts per serving (with alcohol): 158 calories, 0 grams fat, 10 grams carbohydrates, 0 grams protein

Herb Roasted Nuts

It was a great week over here! I had the pleasure of getting to cook with one of my favorites from one of my favorite cookbooks! If you haven’t had a chance to order one, I highly recommend you do! It is a great Christmas gift and the recipes I promise will deliver mouthwatering meals, and she explains the health benefits of the meal and gives you all the nutrition information! This recipe is one of my go-tos! They make for a great hostess gift, teacher, stocking stuff and definitely one you will want to gift yourself! I only add a TINY splash of the maple syrup for my #ketolife but here is the rest of the recipe for you, and a little note from Ali!

 

Herb Roasted Nuts
Makes: 15 Servings, about ¼ cup each
Ingredients:
2 cups almonds
2 cups pecans
1 cup cashews
1 cup chopped brazil nuts
1/3 cup maple syrup
pinch cayenne
2 Tbsp coconut oil
1 Tbsp each: chopped fresh rosemary, basil, thyme
Generous pinch of sea salt

Directions:
Preheat oven to 300 degrees F. Mix nuts and set aside. In a separate bowl mix maple syrup, cayenne, coconut oil and herbs. Stir in nuts and ensure all are equally coated. Spread on unbleached parchment paper over baking sheet and sprinkle with sea salt. Place baking pan at center of preheated oven, bake for 15 minutes. Then move baking sheet to top rack of oven and bake an additional additional 10 min at top rack until liquid evaporates. Cool and store air-tight in mason jars. Consider filling jars and giving as a gift with ribbon.

Nutrition Per Serving: Calories 238, Total Fat 21g, Carbs 9g, Protein 6g

Food as Medicine Tip: 

Nuts are a great source of healthy fats paired with protein and a moderate dose of carbs. They are correlated with increased life expectancy and this may be due to their content of monounsaturated fats, which improve vessel health, and arginine which aids in dilating blood vessels, decreasing blood pressure. They also provide a rich source of fat soluble antioxidants which aid in fighting against cancer and cognitive decline.

Candy Cane Martini

Candy Cane Martini

A Holiday Favorite!   

One of my biggest passions is to party plan! The last couple of years, we have hosted our family and friends to celebrate the holidays! One of the crowd favorites is my signature Candy Cane Martini: it’s delicious, decadent, STRONG and definitely not keto friendly! As a fun touch, we always have an ice luge for the after shaken martini to glide down for a fun presentation!

This year instead of a Holiday party, I am going to co-host a black and white New Years party with Alana up in Canada. You’ll have to stay tuned for the signature cocktail I create to ring in #twentyseventeen

Here’s what you need:

• 1.5 oz – Whipped Cream vodka – My favorite brand is Ivanabitch
• 1.5 oz White Chocolate liquor – I love Godiva
• A splash of Mint liquor (becareful be very conservative with your splash otherwise it becomes a mint martini quickly
• Vanillia Almond & Cashew milk – I love the Almond Breeze brand (You can use whatever milk or cream you would like this is just my favorite)
• 0.5 oz of Grenadine for color
• 1 crushed candy cane for your rim
• Martini Shaker and Glass
• Ice

RIM:
To crush the candy cane, I throw it into a ziplock bag and I then use a hammer and crush all of the candy cane. I then dump it out onto a small plate. To rim the glass, I like to pour a little of the white chocolate liquor onto a small plate and then I dip the martini glass into the liquor and then immediately dip the glass in your crushed candy cane to make it stick!

MARTINI:
I always start by adding ice to the martini shaker then I add all of the ingredients. Give it a good shake and pour it into your rimmed martini glass!

THEN:
Drink responsibly and Enjoy!
